  • 4 tbsp soft cheese
  • 2 green chillies
    chopped
  • a small bunch coriander
    chopped
  • for frying oil
  • 3 pork sausages
    skinned
  • ¼ tsp fennel seeds
  • ¼ tsp cumin seeds
  • 2 eggs
  • 2 naans
    (the fresh ones from the chiller cabinet are best)
  • 2 tbsp mango chutney

Method

  • step 1

    Mix the soft cheese with 1/2 the chopped chillies and 1/2 the coriander, and season.

  • step 2

    Heat a little oil in a frying pan and pinch in little nuggets of sausagemeat. Cook, breaking up the sausage chunks as you fry, until the sausagemeat is golden and crisp. Add the rest of the chilli, fennel and cumin seeds, and fry for 2-3 minutes. In a separate pan, fry the eggs to your liking.

    Heat the naans following the pack instructions. Spread with the soft cheese mix, then the mango chutney. Spoon over the sausagemeat, then top with an egg and the remaining coriander.
