- 2 large floury potatoes
- for frying oil
- ½ tsp paprika
- ¼ tsp oregano
- ¼ tsp garlic salt
- a good pinch chill flakes
- ¼ tsp sea salt
Method
step 1
Spiralize the potatoes and pat dry with kitchen paper. Toss with a few good pinches of the spice mix.
step 2
Heat the oil in a large pan no more than 1/3 full. When temperature reaches 180C (or when a piece of white bread tuns golden in 30 seconds) carefully lower in the fries.
step 3
Fry for 3-4 minutes until crisp and golden. Drain on kitchen paper then sprinkle over a little more spice mix to serve.
