- 500g caster sugar
- 3 limeszested and juiced
- 2½ grapefruitjuiced
- jalapeno chillies or fat green chilliesfinely chopped
- 100ml tequila
- 12 oysters

Method
step 1
Gradually dissolve the sugar in 500ml water over a low heat. Add the lime juice and zest, grapefruit juice, chillies and tequila. Pour into a container and freeze. Every 30 minutes, rough up with a fork to form crystals until you have a frozen mixture. Serve on freshly shucked oysters.
