  • 150g white crab meat
  • ½ shallot
    finely chopped
  • ½ red pepper
    finely chopped
  • 1 spring onion
    finely chopped
  • 1 tbsp olive oil
  • 2 thin-skinned lemons
  • 1 egg
  • 50g plain flour
    seasoned
  • 120g panko breadcrumbs
  • for frying oil

Method

  • step 1

    Mix the crab meat gently with the shallot, pepper and spring onion. Add the olive oil and season well.

  • step 2

    Slice the lemons thinly with a serrated knife and pop out any pips. Lightly season the slices with salt and freshly ground
    black pepper. Beat the egg and put it on a saucer, putting the flour and panko onto other saucers.

  • step 3

    Heat 2cm of oil in a frying pan. Dip the lemon slices in the flour, egg and breadcrumbs and fry them on each side, in batches, until they are browned. Keep them warm while you finish the remaining slices.

  • step 4

    Serve the lemon slices on small plates with the crab salsa piled on top.
