- 300g baby new potatoes
- 150g hot smoked salmonflaked
- ½ small red onionsliced
- 2 handfuls watercress
- 150ml low-fat natural yoghurt
- ½ lemonjuiced

Method
step 1
Steam or boil the new potatoes until just tender, about 15 minutes. Toss with the salmon and onion while still hot. Divide the watercress between 2 plates and pile the salmon and potato on top. Mix together the yoghurt, lemon juice and mint and season. Drizzle over the salad to serve.
