Pak choi with Thai prawn dressing

- 1 tbsp red curry paste
- 150g small peeled cooked prawns
- 2 limesjuiced
- 1 tbsp fish sauce
- 2 tsp palm sugar
- 1 tbsp soy sauce
- 4 large pak choyquartered
- 1 bunch chivesfinely chopped
- 2 tbsp peanutschopped

Method
step 1
Heat a little oil in a frying pan and add the curry paste. Stir-fry for a minute, add the prawns and stir until they’re coated. Add the lime juice, fish sauce, palm sugar and soy sauce, and stir until the sugar has dissolved.
step 2
Steam the pak choy for 5 minutes or until it’s tender. Lay it on a plate and spoon over the prawn dressing. Sprinkle on the chives and peanuts to serve.
