  • 300ml fish or veg stock
  • 150g orzo
  • spray olive oil
  • 1 clove garlic
    crushed
  • ½ red chilli
    chopped
  • 200g raw peeled prawns
  • ½ lemon
    zested and juiced
  • ½ avocado
    stoned and cubed
  • a handful rocket

Method

  • step 1

    Heat the stock in a pan until simmering. Tip in the orzo and cook for 6-8 minutes until just tender. Drain and leave to cool in the sieve while you cook the prawns.

  • step 2

    Heat a spray of oil in a frying pan. Add the garlic and chilli and fry for a minute until fragrant. Add the prawns and lemon zest and cook for 2 minutes until the prawns are pink. Add the lemon juice, with a good grinding of black pepper.

  • step 3

    Toss the warm orzo with the cooked prawns, and fold through the avocado. Divide between plates, then top with the rocket leaves.
