- 2–5 serrano chillies or green chilliesfinely chopped

- 1 tbsp palm or demerara sugar
- 1 tbsp fish sauce
- 250g skinless sea bass filletfinely diced

Method
step 1
Mix the lime juice with the chillies, garlic, palm sugar and fish sauce. Season. divide the sea bass between 6 small glasses. Chill until you are ready to eat then top with the lime and chilli mix, add some fresh coriander and serve with tortilla chips.
