This bacon, Brussels sprouts and chilli broth is a great, healthy way to warm up winter and use up any leftovers you might have. Even sprout-haters will love it

- 1 onionfinely chopped
- 1 clove garliccrushed
- 100g smoked bacon lardons
- olive oil
- 2 parsnipsfinely diced
- 2 thyme sprigs
- a pinch chilli flakes
- 1 litre chicken stock
- 250g brussels sproutsfinely sliced
- chilli oil (optional)to serve

Method
step 1
Put the onions, garlic and lardons in a large pan, drizzle with a little oil and cook for 5 minutes. Add the parsnips, thyme, chilli flakes and stock, bring to the boil, then simmer for 15 minutes. Add the sprouts then simmer for another 5 minutes before serving with a drizzle of chilli oil if you like.
