Ingredients

  • 1 orange
  • 1 small bunch mint, chopped
  • 400g tin chickpeas, rinsed and drained
  • 1 small bunch parsley, chopped
  • 100g feta, broken into chunks
  • olive oil or orange or cider vinegar

Method

  • STEP 1

    Cut the peel and pith off the orange with a sharp knife, then finely slice across the orange. Toss everything together and season well.
