Ingredients
- 1 orange
- 1 small bunch mint, chopped
- 400g tin chickpeas, rinsed and drained
- 1 small bunch parsley, chopped
- 100g feta, broken into chunks
- olive oil or orange or cider vinegar
Method
- STEP 1
Cut the peel and pith off the orange with a sharp knife, then finely slice across the orange. Toss everything together and season well.
