Ingredients
- 1 red pepper, peeled and cut into strips
- 1 peeled and finely sliced
- 1 avocado, cut into strips
- 6 handfuls mixed salad leaves
dressing
- 100ml grapeseed oil
- 75ml (or distilled white vinegar with a little sugar added) sushi vinegar
- 4cm piece ginger, finely chopped
- 2 shallots, finely chopped
- 1 tbsp soy sauce
- 1 clove garlic, crushed or sliced
- to taste golden caster sugar
- to taste lime juice
Method
- STEP 1
Mix the oil and sushi vinegar, then add the rest of the dressing ingredients. Season with some sugar and lime juice. Mix together the salad ingredients then dress.
