- 1 avocadocut into strips
- 6 handfuls mixed salad leaves
dressing
- 100ml grapeseed oil
- 75ml (or distilled white vinegar with a little sugar added) sushi vinegar
- 4cm piece gingerfinely chopped
- 2 shallotsfinely chopped
- 1 tbsp soy sauce
- 1 clove garliccrushed or sliced

Method
step 1
Mix the oil and sushi vinegar, then add the rest of the dressing ingredients. Season with some sugar and lime juice. Mix together the salad ingredients then dress.
