Ingredients

  • 1 red pepper, peeled and cut into strips
  • 1 peeled and finely sliced
  • 1 avocado, cut into strips
  • 6 handfuls mixed salad leaves

dressing

  • 100ml grapeseed oil
  • 75ml (or distilled white vinegar with a little sugar added) sushi vinegar
  • 4cm piece ginger, finely chopped
  • 2 shallots, finely chopped
  • 1 tbsp soy sauce
  • 1 clove garlic, crushed or sliced
  • to taste golden caster sugar
  • to taste lime juice

Method

  • STEP 1

    Mix the oil and sushi vinegar, then add the rest of the dressing ingredients. Season with some sugar and lime juice. Mix together the salad ingredients then dress.
