- 12 baby courgettescut into long slices
- olive oil
- a small bunch parsleyroughly chopped
- 2 anchoviesdrained (rinsed if salted) and finely chopped
- 2 tbsp capersfried in olive oil until very crisp

Method
step 1
Brush the courgette with oil and cook on a griddle (char-grill) on both sides until it begins to soften and char. Lay on a platter. Mix the parsley, anchovies and capers with a little olive oil and spoon over. Squeeze over the lemon juice and season.
