- 1 tsp Dijon mustard
- 25g (look for the Good4u range at Tesco and Sainsbury’s) lentil, pea and bean shoots
- ¼ red onionthinly sliced

Method
step 1
Whisk 1 tsp oil, lemon, vinegar and mustard together and season. Pour into a small jam jar or container. Toss the lentil, pea and bean shoots, onion, tomato and cucumber with the rocket and scatter with pumpkin seeds. Dress the salad just before eating.
