Looking for a simple midweek meal? Try this super succulent steak salad with plum tomatoes and olives. It's quick, easy and full of flavour

- 2 sirloin steaktrimmed of any fat
- 1 tsp smoked paprika
- olive oil
- 1/2 small red onionsliced into half moons
- 200g baby plum tomatoeshalved
- 10 black olivespitted and halved
- a small bunch flat-leaf parsleyroughly chopped
- 1 tbsp red wine vinegar
To serve
- crusty bread

Method
step 1
Rub the steaks on both sides with half the paprika and 1 tbsp of olive oil.

Season and sear in a hot pan for 2 minutes each side.

Rest for 5 minutes before slicing into strips.
step 4
Toss the onion, tomato, olives, parsley, remaining paprika and 1 tbsp olive oil, vinegar and some seasoning.

Mix well and toss through the steaks. Serve with crusty bread, if you like.
