Try this simple steamed fish with orange and ginger, then check out our soy-steamed sea bream, Chinese steamed fish and steamed sea bass.

  • 2 sea bass or bream fillets
  • 2 slices root ginger
    finely shredded
  • 1 clove garlic
    sliced
  • 1 orange
    zested and juiced
  • a handful coriander

Method

  • step 1

    Lightly oil a piece of baking parchment the size of a dinner plate. Put the fish fillet skin-side down in the centre and scatter over some ginger, garlic, orange zest and orange juice.
    Put in a steamer basket (it doesn’t matter if the parcel flips up a bit at the edges), cover with the lid and steam for 5 minutes, more if the fish is big. Serve with coriander scattered over.
