Ingredients

  • 1 large cucumber, halved and seeded
  • 200ml white wine vinegar
  • 100g caster sugar
  • ½ tsp black peppercorns
  • ½ tsp coriander seeds
  • ½ tsp fennel seeds
  • ½ red chilli, finely chopped

Method

  • STEP 1

    Slice the cucumber into thick diagonal slices. Put in a colander and sprinkle over 1 tsp salt. Leave to one side while you make the pickling liquid.

  • STEP 2

    Put the vinegar and sugar in a pan with 5 tbsp water. Add the spices, gently bring to a simmer then cool completely.

  • STEP 3

    When the liquid is cool, rinse the cucumbers and pat dry with kitchen paper. Strain the liquid over the cucumber, add the chilli and leave for an hour (2 if possible) before serving.
