- 250g caster sugar
- 3 limesfinely grated zest of 1 and juice of 3
- 1 pineapplecored and cut into chunks
- 2 mangospeeled and cut into chunks
Method
step 1
Bring the caster sugar, lime zest and lime juice to a boil with 200ml water. Simmer for 5 minutes, skim and cool.
step 2
Whizz the fruit with the lime syrup in a food processor until smooth. Freeze for 3-4 hours until firm.
