Antipasti salad
This Italian salad of artichoke and peppadews is just 95 calories, the perfect quick and easy mid-week meal. Serve with crusty bread to soak up the mustard vinaigrette and add prosciutto if you fancy some protein
Cook the kyivs following pack instructions, generally 25-30 mins on an oven tray at 200C/180C fan/gas 6. Put the empty tray into the oven as it heats up to help crisp the crumbs on the underside of the kyivs when you add them. Leave to cool for 5 mins.
Shred or tear the lettuce into a large bowl. Slice the kyivs and tip them into the bowl along with any garlic butter. Add some caesar dressing to taste and shave over parmesan to serve.
