  • 2 skinless cooked chicken breasts
    cut into chunks
  • 1 avocado
    peeled, stoned and cut into chunks
  • 16 baby plum tomatoes
    halved
  • 1/2 cucumber
    cut into chunks
  • 12 radishes
    quartered
  • 1 romaine lettuce
    chopped
  • 1/2 red onion
    diced

DRESSING

  • 1/2 clove garlic
    crushed
  • 1 tsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1/2 tsp caster sugar
  • 4 tbsp olive oil

Method

  • step 1

    Put the garlic, mustard, vinegar and sugar in a bowl and whisk together, then gradually whisk in the olive oil and 1 tbsp of water. Season well.

    Put the remaining ingredients in a large bowl or on a platter, then drizzle over the dressing and gently toss.
