- 1-2 tbsp harissadepending on how hot it is
- (optional) natural yoghurt to serve
- 4 courgettessliced on the diagonal and fried in a little olive oil
- a bunch corianderchopped
- 200g couscouscooked following the packet instructions
- 2 orangesjuiced and zested mixed with a splash of white vinegar and some olive oil to make a dressing
- ½ large or 1 small roast chickenskin removed
- a large handful pistachiostoasted and roughly chopped

Method
step 1
Mix the couscous, pistachios, courgettes, and most of the coriander in a bowl. Add the harissa and most of the orange dressing and toss. Heap onto plates and top with chicken and more coriander, dress with the remaining dressing. Spoon over some yoghurt and extra harissa if you like.
