- 1 large sweet potatopeeled and cut into thin fries
- olive oil
- 2 feather steaks
- ½ a small bunch flat-leaf parsleyfinely chopped
- a small handful oregano leaveschopped
- 1 red chillismall finely chopped
- ½ clove garlicchopped
- 1 tsp smoked paprika
- 3 tbsp olive oil
- 1 tbsp red wine vinegar

Method
step 1
Heat the oven to 190C/fan 170C/gas 5. Toss the fries with olive oil and season. Spread out on a tray and cook until golden and crisp, about 20-25 minutes.

Mix together the chimichurri ingredients and season.

Heat a griddle or heavy frying pan to high. Oil and season the steak then cook for 2 minutes on each side. Leave to rest for 5 minutes. Serve the steak with the fries and chimichurri.
