- 4 cooked gammon, thick slices
- 100g fresh pineapple, diced
- 1 small papaya, seeded and diced
- 1 red chilli, finely chopped
- a small bunch coriander, chopped
- 1 lime, zested and juiced
- 50g rocket leaves, to serve
Method
- STEP 1
Put the gammon slices on 4 plates. Combine the pineapple and papaya with the chilli, coriander, lime juice, zest and season. Mix well and spoon the salsa over the gammon. Serve with the rocket.
