  • 400g lean lamb mince
  • ½ red onion
    finely diced
  • 2 tsp ground cumin and cayenne pepper
  • ½ lemon
    zested and juiced
  • chopped to make 2 tbsp of each mint and parsley
  • 100ml low-fat natural yoghurt
  • 100g brussels sprouts
  • 200g kale
    tough stalk removed and leaves shredded
  • oil
  • to serve (optional) flatbreads

Method

  • step 1

    Mix the lamb mince, red onion, 1 tsp each cumin and cayenne, lemon zest and herbs. Season and form into 12 small sausages. Chill for at least 1 hour.

  • step 2

    Mix the yoghurt with 1 tsp cumin and half the lemon juice. Blanch the sprouts for 6 minutes, add the kale for the last 3 minutes. Drain well.

  • step 3

    Shred the sprouts, add the kale and toss with 1 tsp oil, the remaining lemon juice, and an extra pinch of cayenne.

  • step 4

    Grill the koftas, turning, for 10 minutes until cooked through. Serve with the salad, yoghurt and flatbreads if you like.
