- 75g dried breadcrumbs
- 2 tsp hot smoked paprika
- ½ tsp ground turmeric
- 1 tsp garlic salt
- ½ tsp celery salt
- 1 tsp dried oregano
- 2 tbsp plain flourwell seasoned
- 1 large eggbeaten
- 4 large skinless chicken thigh filletshalved and excess fat removed

PURPLE SLAW
- ½ red onionthinly sliced
- ¼ red cabbagefinely shredded
- 2 carrotsshredded
- 1 tbsp white wine vinegar
- 2 tbsp mayonnaise

Method
step 1
To make the slaw, toss all the veg with the vinegar and lots of seasoning.

Toss the breadcrumbs with the paprika, turmeric, garlic salt, celery salt and oregano in a shallow bowl. Put the flour and egg in 2 separate bowls.

Dust the chicken in the flour, then the egg and then the spiced breadcrumbs. Put on a rack over a baking tray.

Heat the oven to 200C/fan 180C/gas 6. Bake the chicken for 35-40 minutes or until crisp, golden and cooked through. Toss the mayo with the slaw and serve with the chicken, oven fries and hot sauce.
