Scandi meatball bake with cucumber salad

- 400g pork mince
- 1 egg yolk
- 1/2 tsp allspice
- 100g breadcrumbs
- 1 small oniongrated
- a handful dillfinely chopped, plus extra to serve
- 1 tsp white pepper
- 4 tbsp soured creamseasoned
- to serve crusty bread
CUCUMBER SALAD
- 2 tbsp white wine vinegar
- 1 tbsp caster sugar
- 1/2 cucumberpeeled and cut into half-moons
- 1 tsp yellow mustard seeds
- a handful parsleychopped

Method
step 1
To make the cucumber salad, heat the vinegar and sugar in a small pan until the sugar dissolves. Cool, then put the cucumber in a bowl and pour over the liquid, add the mustard seeds and toss. Leave to sit while you make the meatballs. Stir in the parsley just before serving.

Heat the oven to 200C/fan 180C/gas 6. Mix the first 7 ingredients together and season. Roll into 20 meatballs.

Put the meatballs in a dish and into the oven. Bake for 20 minutes or until golden and cooked through. Drizzle with the soured cream and scatter with dill. Serve with the salad and bread.
