  • 2 sirloin steaks
    brushed with a little oil and seasoned
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 50g rocket
  • a handful cherry tomatoes
    halved
  • a handful of shavings  parmesan

    Method

    • step 1

      Heat a griddle or frying pan until smoking hot and cook 2 trimmed sirloin steaks, brushed with groundnut oil and seasoned – about 2 minutes per side for rare, 3 for medium. Leave to rest for 5 minutes.

    • step 2

      Meanwhile, make the dressing by whisking together 3 tbsp oil, 1 tbsp white wine vinegar and 1 tbsp dijon mustard with some seasoning.
      Slice the steak into strips and toss together with 50g rocket, a handful halved cherry tomatoes and the dressing. Top with parmesan shavings.
