Make our smoky steak with jalapeño cream, then get more tips on how to make the perfect steak.

  • 1 large or 2 small sirloin or rump steak
    fat trimmed
  • olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp hot smoked paprika
  • 2 tbsp of chopped pickled jalepeños
  • 6 tbsp half-fat soured cream
  • a small bunch coriander
    chopped
  • 2 handfuls salad leaves
  • 100g cherry tomatoes
    halved
  • 4 spring onions
    sliced
  • 2 handfuls to serve tortilla chips

Method

  • step 1

    Rub the steaks with oil, then rub in the spices, season and leave. Mix the jalapeños, soured cream and coriander and season.

  • step 2

    Heat a non-stick frying pan until it’s hot and sear the steak for 2 minutes on each side. Rest it for a couple of minutes. Slice the steak and arrange on the plates. Toss the salad leaves, tomatoes and spring onions and add to the side. Serve with a little bowl of jalapeño cream and some tortilla chips.
