Steak salad with chive buttermilk dressing

- 300g lean sirloin steakfat trimmed
- olive oil
- 1 limezested
- 100ml buttermilk
- 1 tsp cider vinegar
- chopped to make 1 tbsp chives
- 1 romaine lettuceleaves torn
- 1 bunch radishessliced

Method
step 1
Heat a griddle pan to very hot. Rub the steaks with a little oil and cook for two minutes on each side for medium. Season and rest while you make the salad.

Whisk the lime zest, buttermilk, vinegar, chives and season.
step 3
Toss the lettuce and radishes and divide between two plates. Slice the steak and add to the salad, serve with the dressing.
