Gammon and leeks is a classic combination. This easy one pot combines fantastic flavours and is ready in just 30 minutes, perfect for a midweek meal.

- 1 potatovery thinly sliced
- 1 leekstrimmed and thinly sliced
- fresh chicken stockcube or concentrate made up to 300ml
- 1 tsp coriander seeds
- 2 steaks or slices gammon
- to serve Dijon mustard

Method
step 1
Put the potatoes, leeks, chicken stock and coriander seeds in a wok or frying pan. Season with black pepper. Boil for 5-6 minutes until the vegetables are just tender.
step 2
Put the gammon on top of the vegetables and cook for 6 minutes. Finish under the grill and either stir the mustard into the sauce or serve it on the side.
