  • 2 (about 600g) bramley apples
    peeled, cored and chopped into chunks
  • 1 tbsp golden caster sugar
  • ½ lemon
    juiced
  • 25g butter

    Method

    • step 1

      Tip the apples into a saucepan with the sugar, lemon juice and about 50ml water. Bring everything to a simmer, then cover the pan and cook the apples gently for about 10 mins until they collapse. Beat with a spoon to break them up completely. You now have perfectly good chunky apple sauce that needs nothing more than a grind of pepper.

      If you want a smoother, richer sauce you can push the apples through a sieve and reheat the smooth apple purée with the butter before serving.
