  • 2 tsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tsp whole cloves
  • 1 tbsp black peppercorns
  • ½ stick cinnamon
  • 1 tsp cardamom pods
    seed only
  • a good grating nutmeg
  • 2 tbsp paprika (not smoked)

    Method

    • step 1

      Put the whole spices in a small pan and heat until fragrant, stirring so they don’t burn. Cool, then grind with a spice grinder or pestle and mortar. Stir in remaining spices and store in an airtight jar.

    Kept in a small airtight jar, these spice blends will last for 2 months.
