- 6 antipasti marinated onions, halved (look for Waitrose or Sacla borretone onions)
- 2 heaped tsp tomato chutney
- 100g soft goat’s cheese
- olive oil
- toasted brioche, to serve
Method
- STEP 1
Put the onions in the bottom of 2 ramekins and add 1 tsp of chutney to each. Add half of the goat’s cheese to each and drizzle with olive oil.
Grill under a medium heat for 8-10 minutes, or until the cheese is bubbling and browned. You need to give this a decent amount of time or the onions won’t warm through serve with the brioche.
