Beetroot and horseradish beef burger

- 400g beef mince
- ½ small red oniongrated
- 1 tsp garlic salt
- for frying vegetable oil
- 4 slices mature cheddar
- 4 burger bunshalved and toasted
- 4 tbsp mixed with 2 tbsp mayonnaise
- soft lettuce leaves
- horseradish cream
BEET RELISH
- 100g cooked beetrootdiced
- chopped to make 2 tbsp gherkins
- finely chopped to make 1 tbsp red onion

Method

Toss the relish ingredients and leave to sit.

To make the burgers, put the mince, onion and garlic salt in a bowl. Season with pepper and mix well, then divide into four balls. Use a spatula to squash each into a flat patty.

Brush each patty with oil then fry in a hot frying pan for 2 minutes on each side until cooked through. Add a slice of cheese to each burger and either cover the pan with a lid until it melts or flash under a hot grill.

Spread the toasted bun halves with the horseradish mayo. Top 1/2 of them with lettuce, a burger, then a spoonful of the relish. Top with the remaining bun halves and serve.
