- 400g tin cannellini beansdrained and rinsed
- 2 spring onionsfinely chopped
- 1 red chillifinely chopped
- ½ lemonjuiced
- ½ clove garliccrushed
- grated to make 4 tbsp parmesan
- ½ small bunch flat-leaf parsleyroughly chopped
- olive oil
- 8-12 slices ciabatta
Method
step 1
Mix together the beans, spring onions, chilli, lemon juice, garlic, parmesan and parsley with a good slug of olive oil.
Season. Drizzle the ciabatta slices with oil and grill or bake till crisp and golden.
Top with the bean mix. Drizzle with extra oil and serve.
