- 1 corn tortillacut into strips
- olive oil
- 1/2 avocadodiced
- chopped to make a handful coriander
- 1 red chillichopped
- 2 spring onionschopped
- 2 radisheschopped
- 1 tub/tin bean soup
Method
step 1
Cut the tortilla into strips and shallow fry in olive oil until crisp and golden.
step 2
Toss the avocado with a handful of chopped coriander, red chilli, spring onions, radishes and a little olive oil.
step 3
Sprinkle over hot bean soup with the crisp tortilla strips.
