If you prefer you can make it in one large dish instead of 8 small dishes.

  • 100ml black coffee
    freshly made
  • 1 tsp amaretto
  • 16 sponge fingers
  • 3 eggs
  • tbsp golden granulated sugar 3
  • 250g mascarpone
  • 1 bar good quality dark chocolate
    grated
  • a few amaretti biscuits
    crumbled
  • 1 tsp vanilla extract

Method

  • step 1

    Mix the coffee with the amaretto. Soak each finger individually, not letting them go soggy. Put 2 biscuits at the bottom of each of 8 small glass dishes. Break them up to fit them if you need to.

  • step 2

    Separate your eggs and beat the yolks with the granulated sugar until the mixture goes a light-yellow colour. Beat in the mascarpone.

  • step 3

    In another bowl whisk the egg whites until they form stiff peaks. Fold this mixture into the mascarpone and yolk mix and then spoon the mixture on top of the biscuits.

  • step 4

    Decorate the top of the mixture with the grated dark chocolate and the crumbled amaretti biscuits. Cover each dish with clingfilm and chill overnight or for several hours.
