Use this jerk seasoning for recipes such as our jerk chicken, jerk chicken skewers, jerk pork belly, jerk halloumi burgers and other jerk-flavoured recipes.

  • 1 tbsp allspice berries
  • 2 tsp black peppercorns
  • 1 tsp ground cinnamon
  • 2 tsp dried thyme
  • 2 tsp cayenne pepper
  • 1 tsp garlic granules

    Method

    • step 1

      Put the whole spices in a small pan and heat until fragrant, stirring so they don’t burn. Cool, then grind with a spice grinder or pestle and mortar. Stir in remaining spices and store in an airtight jar.

    Kept in a small airtight jar, these spice blends will last for 2 months.
