
Linguine with broccoli and roasted peppers

Pasta is one of the easiest suppers you can make for two. This simple vegetarian linguine is on the table in 15 minutes. Just toss cooked linguine with broccoli, peppers and anchovies for a quick midweek meal.

- 150g linguine
- oil olive
- 2 anchoviesdrained and chopped
- 3 cloves garlicsliced
- 4 roasted pepperscut into chunks (look for ones in brine rather than oil)
- ½ lemonzested
- 200g broccolicut into pieces

Method
step 1
Cook the pasta following pack instructions. Heat 2 tbsp olive oil in a pan, add the anchovy and garlic and cook on medium heat until garlic is golden. Remove from the heat and add the peppers and lemon zest.

About 4 minutes before the pasta is done, add the broccoli to the same pan; drain when both are ready, reserving 2 tbsp of the liquid. Return to the pan, add the pepper mixture and toss together with the reserved liquid.
