Recipe tip: Most supermarkets sell a cheddar/mozzarella mix which is great for pizzas and toasties.

  • 125g grated cheddar and mozzarella
  • 1/2 red onion
    finely sliced
  • 4 tortillas
  • 1 avocado
    halved and sliced
  • 1/2 tin black beans
    drained
  • a handful rocket
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 6 Peppadew peppers
    chopped

Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Divide the cheese and onion between the tortillas. Put on a baking sheet and bake until the cheese is melted, about 5 minutes. Add some avocado and scatter the beans and rocket onto each tortilla. Mix together the olive oil, lime juice and chopped peppers and drizzle over each.
