- 250g block halloumicut into 6 slices
- 6 slices roasted red pepper from a jarcut the same size as the halloumi
- 6 slices prosciutto
- ½ honeydew melonhalved and deseeded
- 1 red chillideseeded and finely chopped
- a handful mintroughly chopped
- 1 tbsp white wine vinegar
- 1 tbsp extra-virgin olive oil

Method
step 1
Wrap each slice of cheese in pepper and then prosciutto.
step 2
Slice the melon and remove the skin. Put in a bowl with the chilli, mint, vinegar and oil. Season and toss together.

Brush the cheese parcels with oil. Heat a frying pan and fry them until golden all over and the cheese is becoming squidgy. Serve with the melon and some bread, if you like.
