- 1 (about 200g) sirloin steakfat trimmed
- 1 tsp ground cumin
- a large pinch smoked paprika
- 1 limejuiced
- 1 small red peppersliced into strips
- 1 small yellow peppersliced into strips
- 1 onionhalved and thinly sliced
- 2 tsp olive oil
- 10 baby plum tomatoeshalved
- ½ a small bunch corianderroughly chopped
- 4 small corn tortillaswarmed
CORIANDER YOGURT SAUCE
- 100ml low-fat natural yogurt
- ½ clove garliccrushed
- 1 green chillichopped
- ½ a small bunch corianderroughly chopped

Method
step 1
Put the steak in a plastic food bag then bash a few times with a rolling pin to flatten it a little. Open the bag and sprinkle over the cumin, paprika and lime juice, and season well. Smoosh everything together and leave to marinate while you make the other fillings.

Whizz together the yogurt, garlic, chilli and coriander in a small blender until just smooth.

Put the peppers, onion and olive oil in a bowl, and toss with seasoning. Heat a non-stick frying pan until hot then tip in the pepper mix and fry until softened and golden at the edges.

Heat a griddle to really hot then sear the steak for 2 minutes on each side. Put on a plate to rest for 5 minutes, then slice.

Add the tomatoes to the pepper pan and give it another blast of heat until the tomatoes soften. Toss in the steak and coriander. Serve in the tortillas with a spoonful of the sauce.
