  • 1.2kg brussel sprouts
    trimmed and halved
  • grated to make 2 tbsp ginger
  • 2 oranges
    zested and juiced
  • 100g butter
  • 2 tbsp 
soy sauce

Method

  • step 1

    Bring a large pan of water to a simmer and add a big pinch of salt. Add the sprouts and blanch for 3-4 minutes until they’re bright green and tender, but still have bite. Drain well. Mash the ginger, orange zest, and butter with plenty of seasoning. Tip into a frying pan and let it melt for a minute.

    Add the sprouts and toss to coat in the butter. Fry for 5-10 minutes until the edges are starting to turn golden brown. Add the orange juice and soy and simmer until the sauce coats the sprouts.
