Ingredients
- 1 tbsp groundnut oil
- a small chunk ginger, finely grated
- 1 tsp ground cumin
- ½ tsp ground coriander
- 220g paneer, cut into cubes
- 1 green pepper, cut into chunks
- 1 small mango, diced
- 1 red chilli, finely chopped
- a handful of leaves mint, plus a few leaves
- ½ lime, plus wedges to serve
- 2 small naans, warmed to serve
- to serve natural yogurt
Method
- STEP 1
Mix the oil, ginger and spices in a bowl. Add the paneer and pepper and toss, then leave for 10 minutes. In a separate bowl, toss the mango, most of the chilli and the chopped mint with a squeeze of lime and season.
- STEP 2
Heat the grill to high. Skewer the paneer and pepper then grill for 6-8 minutes, turning until the paneer is golden. Scatter with more chilli and the mint leaves. Serve with the salsa, warm naans, yogurt and lime wedges.
