- 1 tbsp groundnut oil
- a small chunk gingerfinely grated
- 1 tsp ground cumin
- ½ tsp ground coriander
- 220g paneercut into cubes
- 1 green peppercut into chunks
- 1 small mangodiced
- 1 red chillifinely chopped
- a handful of leaves mintplus a few leaves
- ½ limeplus wedges to serve

Method

Mix the oil, ginger and spices in a bowl. Add the paneer and pepper and toss, then leave for 10 minutes. In a separate bowl, toss the mango, most of the chilli and the chopped mint with a squeeze of lime and season.

Heat the grill to high. Skewer the paneer and pepper then grill for 6-8 minutes, turning until the paneer is golden. Scatter with more chilli and the mint leaves. Serve with the salsa, warm naans, yogurt and lime wedges.
