  • 500ml oat milk
  • 100g chia seeds
  • 2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 3 Braeburn apples
    peeled, cored and chopped
  • 30g raisins
  • ½ tsp ground cinnamon

Method

  • step 1

    Put the oat milk, chia seeds, vanilla and maple syrup in a large bowl. Stir to combine then cover and refrigerate overnight or for at least 6-8 hours.

    Combine the apples, raisins and cinnamon with 3 tbsp of water in a medium pan. Put over a medium heat, cover and simmer for 10 minutes until the apples are softened. Remove from the heat and leave to cool completely.

  • step 3

    Give the chia pudding a good stir and divide between four serving glasses. Top with the apple mixture to serve.
