Broccoli hollandaise tart

- 100g ready-made hollandaise
- ½ a small bunch lemonzested, plus 1 tsp juice (optional)
- finely chopped to make 1 tbsp chives
- 320g sheet ready-rolled puff pastry
- 175g long-stemmed broccolitrimmed
- ½ tbsp olive oil
- 2 tbsp flaked almondstoasted

Method

Heat the oven to 220C/fan 200C/gas 7. Put a baking tray in the middle of the oven to heat up.

Taste the hollandaise and add the lemon juice if it needs a little acidity boost, season if needed, and stir in most of the chives. Unravel the puff pastry onto the baking paper it comes with, and lightly score a 1cm border around the edge with a knife. Spoon the hollandaise into the middle, spreading out to the border.

Put the broccoli into a bowl, add the olive oil and toss well with some seasoning until well coated. Add to the tart on top of the hollandaise. Transfer to the hot tray, on the baking paper, and bake for 20-25 minutes or until the pastry is puffed and golden, and the broccoli is tender. Scatter with the toasted almonds, lemon zest and remaining chives.
