- 4 spring onionschopped
- 2 sticks celerysliced on the diagonal
- 2 green applesdiced
- 2 tbsp golden sultanas
- 400g tin chickpeasrinsed and drained
- ½ a bunch corianderchopped
- 2 Little Gemsleaves separated
DRESSING
- 2 tsp curry paste (any Indian one will work)
- 2 tbsp mango chutneychopped if chunky
- 3 tbsp greek yogurt
- 1 limejuiced

Method
step 1
Mix together the dressing ingredients until well combined.
step 2
Add to the rest of the salad ingredients, except the lettuce leaves (and reserve some coriander for garnishing), and toss with some seasoning. Arrange the lettuce leaves on a plate and pile the salad on top. Finish by sprinkling over the rest of the coriander.
