Courgetti with sundried tomato, pesto and mozzarella pearls

- 1 clove garlicpeeled
- 500g courgette spaghetti
- 4 tbsp fresh pesto
- 125g mozzarella pearlsdrained
- 140g sundried tomatoesdrained
- to serve basil
Method
step 1
Heat 1 tbsp oil and the garlic clove in a frying pan until hot, then fry two packs of Tesco courgette spaghetti (£1/250g) for a few minutes until warm and just starting to wilt. Tip into a large bowl and season well, removing the garlic.
step 2
Toss with 4 tbsp Tesco Finest Pesto and Fresh Basil (£2.50/130g), the Tesco Mini Mozzarella Pearls (£1/125g) and drained Tesco Sundried Tomatoes (£1.50/140g). Drizzle with more olive oil and scatter with torn Tesco Basil (70p/31g) to serve.
