This super easy starter is a great one to bring out at dinner parties over the summer. It only takes 15 minutes to put together and serves six. Use whichever crisp, fresh vegetables are available

- 250ml mayonnaise
- 2 garlic clovescrushed
- 2 tbsp chopped chives
- 1-2 tsp chipotle paste
- 1 limejuice only
- vegetables for crudités (you could use fennel, carrots, courgettes with flowers, radishes, celery with leaves or cooked green beans, fresh peas, radicchio leaves and asparagus)

Method
step 1
Mix the mayonnaise, garlic, chives and chipotle paste together. Season, then add just enough lime juice to balance the flavour. Spoon into a serving bowl or several smaller bowls.

Trim the vegetables to serve as crudités and arrange on a platter around the bowl or bowls of aïoli.
