- 2 wholemeal pitta bread
- 2 tomatoescut into chunks
- ½ red onionsliced
- ½ cucumbercut into chunks
- olive oil
- ½ lemonjuiced
- 250g halloumicut into chunks

- 75ml natural yoghurt

Method
step 1
Heat the oven to 180c/fan 160c/gas 4. To make the pitta crisps, separate the pittas into 2 halves, cut into triangles and bake for 5-10 minutes until crisp.
Toss the tomatoes, onion, and cucumber with 1 tbsp olive oil and the lemon juice.step 2
Sprinkle the halloumi with a little oregano then grill or fry until golden. Mix the houmous and yoghurt with a little water to make a dressing and season.
Toss the halloumi with the salad, drizzle over the houmous dressing and serve with the pitta crisps.
