  • 1 tbsp (ghee is a clarified butter available from Indian shops and some supermarkets) ghee or butter
  • 2 bay leaves
  • pods 3 green cardamom
  • 1 stick cinnamon
    broken
  • 3 cloves
  • 1 tsp cumin seeds
  • 1½ tsp root ginger
    finely grated
  • 1 tbsp ground coriander
  • ¼ tsp red chilli powder
  • a pinch golden caster sugar
  • 450g frozen peas
  • chopped to make a handful coriander

Method

  • step 1

    Heat the ghee or butter in a non-stick pan. Add the bay leaves and whole spices, cook for 20 seconds then add the ginger and stir for 30 seconds. Add the powdered spices, salt and a splash of water, cook for 40 seconds. Stir in the sugar and peas and sauté for 3-4 minutes or until the peas are cooked and the water has evaporated. Stir in the coriander and serve.
