- 1 tbsp (ghee is a clarified butter available from Indian shops and some supermarkets) ghee or butter
- 2 bay leaves
- pods 3 green cardamom
- 1 stick cinnamonbroken
- 3 cloves
- 1 tsp cumin seeds
- 1½ tsp root gingerfinely grated
- 1 tbsp ground coriander
- ¼ tsp red chilli powder
- a pinch golden caster sugar
- 450g frozen peas
- chopped to make a handful coriander

Method
step 1
Heat the ghee or butter in a non-stick pan. Add the bay leaves and whole spices, cook for 20 seconds then add the ginger and stir for 30 seconds. Add the powdered spices, salt and a splash of water, cook for 40 seconds. Stir in the sugar and peas and sauté for 3-4 minutes or until the peas are cooked and the water has evaporated. Stir in the coriander and serve.
